Frugal and Healthy: Cleaning out the Pantry- Grainfree Creations

So, in an attempt to keep the budget low and build the savings I skipped the grocery store this week. I have plenty of meat and various fats around, frozen and canned veggies and fruit- so I knew that we could make do without too much effort. I also have noticed some items in the pantry and frig that seem to be neglected and we really need to use up.

This week my pantry challenge items were:
Cranberries
Raw Cashews
Pecans
Walnuts
Raw Pumpkin Seeds
Coconut Cream Concentrate

So, what did I do with these items?

Cranberries were cooked down until they popped with just a bit of water. Then I made them into 2 different dishes.

Creamy Cranberry Dressing
1/2 c. cooked cranberries - liquid drained
1/2 c. homemade mayo
1-3 t. raw honey
salt and pepper to taste
pinch of ground mustard

Stir to combine and serve over salad. I did a salad of romaine, chopped hard-boiled eggs, sunflower seeds and chopped bell pepper.

Cranberry Fruit Salad
1/2 c. cooked cranberries- liquid drained
1 c. mandarin oranges- reserving part of the liquid or 1 c. pineapple- or a mix (using the oranges and pineapple which are sweeter eliminate the need for adding sugar)
1/4 c. chopped pecans
1/4 c. coconut flakes- optional (I love fruit salad with coconut but the kids prefer it without)

Mix together and add back as much liquid as needed for your preferred consistency and sweetness.

Blueberry Scones
1/2 c. raw pumpkin seeds *freshly ground
1/2 c. walnuts* freshly ground
1 1/2 c. almond meal/almond flour
1/2 tsp. celtic sea salt
1/2 tsp. baking soda
2 eggs
1/3 c. raw honey
1/3 c. extra virgin coconut oil(melted)
1 c. frozen blueberries
*Preheat oven to 350 F

1. Grind your nuts/seeds(I use a small coffee grinder for this- it is quick and easy) you can also use all pre-ground nut flour.
2. Combine flour, salt and baking soda.
3. In a separate bowl combine eggs, melted oil, and honey.(Measure your oil first and the honey will just slide right out of your cup)
4. Combine wet and dry ingredients- stir in blueberries.
5. Scoop the batter in about 1/4 c. mounds on the greased cookie sheet. Leaving a few inches between- should make 12-16 scones.
6. Cook 12-18 min. until done throughout.
7. Serve with butter or coconut oil to spread on top~ Enjoy!

*Nuts and seeds are of course always better soaked first. To grind them it helps for them to be dry- or use a good food processor.

We called these our breakfast cookies. Everyone absolutely loved them. I don't know how close they are to real scones but regardless they were delicious and easy- like a cross between a pancake and biscuit. YUM!

Cashews were soaked and blended into a Broccoli Potato Soup for some added protein for our quick and easy lunch.

Easy Broccoli Potato Soup
1 -2 c. bone broth
1 c. broccoli (I had some precooked leftover from supper)
2- 3 potatoes chopped
1/2 onion, chopped
1 c. soaked cashews
Water as needed
salt and pepper to taste

1. Saute onions in lard or tallow.
2. Add in bone broth and potatoes. Cook potatoes until soft.
3. Towards end of cooking add broccoli(give a bit more time if raw) and soaked nuts. Add water as needed for desired thickness.
4. Use an immersion blender and blend until smooth.
5. Salt and pepper to taste!
6. Serve and enjoy!

This was a very simple soup, nothing fancy but lots of good nutrition with the bone broth and broccoli and protein from our soaked cashews. Using the bone broth makes the protein more easily assimilated as well.

Coconut Cream Concentrate
Nothing fancy for this item, I used some in some Curried Lentils and also in some hot tea. We also enjoyed some in a smoothie as well.

Coming next week I am going to be using up some sun-dried tomatoes, artichokes and chia seeds. I am all ears for recipe ideas if anyone has some!

Menu Plan Monday


Trying to return to some semblance of normal here. I am still 'taking off' this week as I just decided, well I wanted to, we did a lot of school during the summer but I felt we needed a break now. So, there you have it!

As I mentioned I am doing Motivated Moms chore list well on Mondays it has - inventory frig and make menu. Happily for me I have been doing my menu plan on Mondays as it is so it works out well. I had vague notions of checking the frig but have been trying to make a more concerted effort at it since I have this reminder to do it. So, this week I will be using up the bag of cranberries in the frig along with some of the lamb that has been in the freezer. Veggies are sparse this week as I need to go to the store however I am trying to stretch it to save some money on the budget.

I absolutely adored the refried beans last I made them so was anxious to put them back on the schedule! I think this time I will be making a double batch even!

Monday: Crockpot Lamb Ribs, Mashed Potatoes and Salad (with cranberry vinaigrette)
Tuesday: Chicken w/ Cranberry glaze, roasted broccoli and baked sweet potatoes
Wednesday: Crockpot Refried Beans, Corn and Cauli Mexi Fried Rice
Thursday: Beef Stew
Friday: Pecan crusted Salmon, Green Beans and Roasted Potatoes and Carrots
Saturday: Leftovers

I seen a recipe over at Elana's today for Cinnamon Pecan Brittle and as I have some pecans that are getting a bit old I thought it would be a wonderful treat for us. I hope to make it this afternoon using raw honey in place of the agave.

Balancing Life: Year in Review: Random Musings

As I said I believe in my first post on here it was my goal this year to really prioritize my personal and family goals and live according to those values. Of course that doesn't mean that I will ever be perfect with that, gosh I am only human, a selfish creature at that. That being said I think that I have made good strides in a lot of areas for this year. However, I still have many areas to work on, so onto my goals for the coming year. I like saying goals, not resolutions. I am making a plan for these things to happen, not just hoping that somehow changes materialize.

1)Spiritual Life
-Family Prayer and study time in the evening. Trying to decide how best to approach this- I have one week for an exact plan!
-I will search for more opportunities this coming year for the kids(and myself) to be of service to others. I am considering checking into trying to work at the food pantry again.

2)Outdoor Time
- I want to continue with activities we have started, hiking, biking, etc. I would like to make sure we have one bigger outdoor adventure a month.

3)In the Home
-I took a good look this year at my own responsibilities and how I was meeting them. I found that my execution was not as even as I wished. I would take the time to mop my floors on my hands and knees but the laundry wasn't always caught up. Now, where is the sense in that? This year especially I resolved that I would prioritize and not get carried away doing this thing or that. I also lowered my expectations and I am ok with that. Before when anyone would come over I would spend weeks cleaning every nook and cranny, polishing the windows, taking a q-tip to various corners. I don't do it anymore.

I had company last week and I could have spent the night before in a tizzy about this and that but I didn't. I decided that playing games with the family was more important. Of course I seen things here and there that weren't as clean I was would like but I am not going for perfection.

While we have been doing good with basic chores; sweeping dishes, laundry etc. our deep cleaning tasks have been done rather sporadically. It takes too much mental energy for me to plan it out. How often do I do things like clean out the frig? Wash the walls? Clean out the dishwasher? Wash under the stove? Wash the baseboards? It takes more mental energy than I wish to plan and think it all out. My plans thus far have not worked well, either it has been too much work or really not went smoothly.

In an effort to reduce my load and try to simultaneously actually trying to keep up with those tasks I signed up for http://motivatedmoms.com/ At $8 for the year I felt it was an investment I could afford to make. It is a very simple system, every day has a list of daily chores and then a list of half-dozen or so deep cleaning tasks broke down into small chunks. Now the daily tasks, as I said have been getting done, but the deep-cleaning has not been fluid at all. I am loving the way it breaks down those more in-depth tasks. It seems to be organized in a way that my brain and organizational system works. That is all there is to it. Now, I don't have to organize my own spreadsheet to determine what needs to be done weekly, monthly, seasonly, etc. Just read a list and hopefully this will make my execution of such things much less sporadic. Another big bonus to the little tasks is that makes it easy to delegate jobs to the kids as well. Oh, and it even lists things like, clip the kids nails, refill prescriptions, exercise and such- much more than just cleaning!

4)Family Time
-Another one of my family goals is reduced media. Ideally I would like the kid's exposure to be limited to a few times a week. Sometimes this happens and sometimes not. On a positive note though I am pleased with what they have been watching when they are watching. We signed up for Netflix again as in winter we generally watch more tv. Now with a new Blue-Ray player I can pick exactly what to put on there and there are no commericials. We have lots of science documentaries, Veggie Tales and various PBS shows. Brian and I are still trying to decide what our exact family goals are in this regard. We know we don't want them to focus on the screen but how do you quantify that? What is too much? That will be different for everyone. The kids have different personalities as well. Some kids are more easily affected by tv, some become addicted more readily. I think for us that I want to continue to enforce no screen time during school time ie until after quiet time. In the evenings I would like to limit the movie times to twice a week, one of those being a documentary.

I would like our family time filled with devotion time, games, read-alouds, working together, music and handicrafts. We really did a lot more of these activities this past year but still could do more. I want the kids to look back with fondness our evening family time doing things with each other, playing together and working together.

5) Food
-Sigh... Do I have a whole life category for food? I don't know. Being a gluten/dairy/soy free family we have to give some thought to food, especially when out and about. This past year we have had a very simple diet. Mostly meat, eggs, veggies, fruit, nuts and fat. I had a new baby and honestly not that much desire to cook too much that was elaborate. I have had a bit more of a desire as of late to cook more but not a lot.

Honestly, by Traditional Food standards our diet has much area to improve. The kids have been having oatmeal a few mornings a week, it is not soaked- the horror! Their nuts haven't been soaked either, yep, blasphemy. I decided to just let it be. I am able to get everything done reasonably easy now with minimal amount of time and effort. We eat a fairly wide variety of whole foods. We all generally enjoy our meals, yep, seems to be going pretty good to me.

So, I should say I have a goal to do more soaking or probiotics or this, that, or the other thing for the New Year. But I don't to be honest. Of all my priorities for the New Year that one is pretty low on the totem pole!

I have 2 goals here; to continue to make consistent meal times a priority. Breakfast and lunch are pretty easy, but supper I still haven't figured out exactly what time it should be. We have wavered between 5:30-6:30. Secondly, I want to focus on cutting out so much snacking. Some days this goes well and others not so much. Lily especially constantly wants to snack and it drives me bonkers.

6)Finances
We have been so blessed in this down economy. Brian continues to have more work than time. Unfortunately with this past year and a new baby we didn't save as much as we would have liked. We are hoping in the New Year that we will remedy that. We have set up some things to make that easier.

We have 3 short term goals at present we are saving for on a 3 yr plan- we are entering year 2.
1)Replace our van- hoping to have another 5 yrs or so but we want to be prepared - just in case- my vehicle is 10 yrs old and Brian's 16.
2)Have our entire max out-of-pocket for our Health Insurance- we are on a high deductible plan and having this put back would be a load off of both of our minds- hopefully it will never be needed but considering we had to just last year(my husband is a genetic anomaly!) I think it is prudent.
3)A years worth of basic living expenses-

In 5 yr 11 months the house will be paid off, not that I am counting. Before that time I would like to have our finances in good order. Well, I guess they are in pretty decent order but time is moving on and as past experience has shown you never know what will happen. So, I tend to overanalyze everything. Making list after list of such things I hope to accomplish.

7) Personal Life
Last but not least I need to work on being more virtuous myself. I am a selfish person. I get jealous, vain at times, lazy, arrogant. Yep, all those things. I keep at work going against those things. Continuing to pray and try to be a better person with the grace of God. I know I will never be perfect(I am not that arrogant!) but I also know I must strive to be better. To be a good Christian example for the world and my children, maybe one day I will live up to that goal!

Monday Menu Plan


It's Christmas time! Lots going on this time of year of course there is still so much in regular life to take care of as well. Brian may or may not have off on this Thursday so our schedule is a bit up in the air. Friday and Saturday we will be busy with various get togethers- we have 3 to go. One with Brian's dad's side, one with his mom's side and dinner with my Mom's family. Of course our own family time and church as well.




Monday: Hamburger Soup- w/ Potatoes, Green Peas and Carrots
Tuesday: Mexican Chicken w/ Fried "Rice" and Bell Peppers and Tomatoes
Wednesday: Chili
Thursday: Shephard's Pie w/ Mashed Cauliflower
Friday: Dinner at In-Laws
Saturday: Leftovers and dinner at Mom's

Monday Menu Plan

Oh, the Holidays. Oh, the craziness. I do enjoy this time of year but it seems harder and harder to keep everything together. I find us slipping into chaos and me trying to keep everything pulled together.

I have a vague weekly plan for meals that I have been duplicating-in case you haven't noticed. Sunday I cook a big meal, Mondays is ground meat, Tuesdays is crockpot, Wednesdays is soup/vegetarian, Thursday is beef/roast and Fridays is Fish. I plan for leftovers on Saturday which is nice as every mom likes a day off now and again. This weekend I had so many leftovers I didn't have to cook lunch or dinner on Saturday AND lunch on Sunday as well.

During the week our lunch is pretty plain. I try to plan for one day as fish day- like salmon patties or tuna salad, one day with lunch meat, one day leftovers and hodge podge this and that the rest of the time. We seem to get by one way or the other, sometimes I might throw together a quick soup or stir-fry or maybe an egg dish if we didn't have some for breakfast. Perhaps something with beans or such. This week we will have dinner out on Friday with our friends(hi all!) so I won't be planning a meal for that although I will be bringing a couple of dishes. Last week we had a girl's night at my friend Roxanne's and she made a delicious soup so we are putting that on the menu this week, I hope my family enjoys it as much as we all did.

Monday- Roxanne's Lasagna Soup (I will serve this with pasta on the side for the rest of the family- as I don't generally eat pasta and gluten free pasta doesn't stand up to cooking very well)
Tuesday- Cranberry Beef Roast served with roasted asparagus(I had some extra homemade cranberry sauce put up from Thansgiving I needed to use)
Wednesday- Make your own tacos- Mexican spiced beef and black beans, homemade pico, lettuce, guacamole- crockpot refried beans- these will be served with the grain free bread I made a few weeks back
Thursday- Dorowat Stew- perhaps some homemade Injera( I have had some teff flour to use forever- - I am going to start the batter fermenting today and hopefully it will be ready to go by then)
Friday- Dinner at Janice's
Saturday- Leftovers

Grain-Free Apple Pancakes-GF/DF/SF/NF

We had these just yesterday for Breakfast. Unfortunately we didn't get pictures before they were scarfed down. These are especially delicious topped with butter(if you can eat it) and raw honey. This recipe is not an exact science as the size and juiciness of an apple varies greatly. The recipe seems very carb and sugar heavy but with squeezing the juice of the apple you are getting rid of a big amount of the sugar, leaving carbs from the fiber mostly.

Apple Pancakes
6 medium apples- grated
6 eggs
1/2-1 tsp cinnamon(cinnamon also helps regulate blood sugar response)
extra virgin coconut oil or butter for cooking

1. Place grated apple on the middle of a clean kitchen towel. Twist the towel over a large bowl or cup and squeeze the juice out of the apple. You want to get the majority of the juice out but you don't want it entirely dry.
2. Put juiced grated apple in bowl , add eggs and cinnamon- mix well. This should hold together fairly well- you may add extra juice or eggs if it seems needed.
3. Heat pan over medium heat and add coconut oil or butter.
4. Use a 1/4 c. measuring cup to form your pancake. Gently pour into a heated pan- use the back of the measuring cup to gently flatten the pancake.
5. Let these cook until starting to firm up on the top before flipping, they can be delicate.
6. Cook until slightly golden brown on both sides.
7. Serve and enjoy! Top with extra virgin coconut oil or butter and raw honey.

*Notes: I have tried juicing the apples and then using the pulp but it seems to make it too dry. I use the large holes on my grater for the apples.
*It is better to keep these pancakes small so they cook through 1/4-1/3 c. is the largest I would make them to ensure that they cook through.
* The leftover juice is delicious. The kids love to share it as we don't usually buy juice.

Happy Birthday and Merry Christmas Ava dear!


Ava recently turned 1! I cannot believe it time flies so fast. She is working hard on walking, taking more and more steps. She says hi and bye, although of course only when she wants.

We didn't really have a birthday party, I know slacker mom. Poor thing isn't hardly getting any Christmas presents either. One thing she is getting for Christmas is this bunting. We spend a fair amount of time outside, cold or not, so it was really more of a need. I needed something that could cover her hands and feet and make sure they stay covered.

One might wonder why she got the dinosaur one, well, it was the only unisex one on sale! I figure with more kids coming I should get one that would work for a boy or a girl. I think she looks absolutely adorable! Poor thing cannot walk at all in it with it over her feet. However, of course it is perfect for riding in the Ergo as I don't have to worry about her pants riding up.

Monday Menu Plan

Well, I never got a menu plan up for last week. It took me a bit to get back in the swing with being sick all weekend. This weekend however we were able to get things back in order and hopefully things will go smoother.

I think we will keep our meals fairly simple this week especially as I have plans for a few nights plus we have some family activities for Advent in the evening as well.

I have lots of leftover veggies I need to use as well so some soups will be good to use them up. Brian had to work all weekend so it will be nice to have breakfast one night as he missed family breakfast Sunday.


Monday: Taco Soup
Tuesday: Crockpot Beef Stew
Wednesday: Breakfast- Pancakes,Scrambled Eggs and Bacon
Thursday: Crockpot Chicken Curry
Friday: Fish Sticks(homemade) , French Fries and Coleslaw
Saturday: Leftovers
