It is said that God works in mysterious ways, well today was one of those. Standing in the church vestibule aka cry room with a crying, screaming, baby today I realised my prayers had been answered. Now, what prayer could that be? Well, actually it was two prayers. My prayers for patience and humility.
How better to learn patience then when a screaming baby in church? That is how God works, you don't magically wake up with more patience, God gracious as he is, gives you the chance to practice that virtue and some grace along the way. Ah, the fun. Silly as it was it brought tears to my eyes. I was thinking everyone feels sorry for the poor mom so upset that she is crying. All the while I was thinking how blessed I was to feel God in my life.

Menu Plan Monday

Today I have been enjoying the Simple Recipes site and decided to pull up 2 weeks worth of menus. Hopefully, that works out well- sometimes that means that I forget what I am supposed to cook. I will be modifying these recipes as needed to make them grain and dairy free, although most of them are fine as wrote.
I have a HUGE package of lamb to eat up so will be doing lamb about once weekly or so until that is gone.
Monday: Albondigas Soup
Tuesday: African Chicken Peanut Stew
Wednesday: Dinner at a Friends
Thursday: Spicy Lamb Stew with Squash
Friday: Veggie Chili
Saturday: Leftovers
Sunday: Spanish Baked Chicken
Monday: Meatloaf- mash potatoes- green beans
Tuesday: Chicken Enchiladas (with my grain free veggie wraps and no cheese), mexi "rice"
Wednesday: White Chili
Thursday: Spicy Lamb Stew w/ Almonds and Apricots
Friday: Sesame Fish Sticks, Slaw
Saturday: TBA Company Coming-

Resolutions and Goals
I made some lofty goals this year for myself and my family. I think realistic but lofty but I am a natural optimist.
1)Family time- We started the holidays watching more tv than desired. Ava had a cough for a bit and then Brian and I felt under the weather, so we didn't get outside much. However, since last week it has been cut back again, thank goodness. We have watched some good kid movies like Heidi and National Velvet and in the evening Brian and I have been watching a short (13-14 min) episodes about an Abbey in Australia. We have also been listening to various apologetics videos- we are really enjoying Youtube.
Right now we are all reading The Indian in the Cupboard and are totally enthralled with the story. We should finish it today or tomorrow and we are planning a family movie night with the movie based on the book.
As I said earlier unfortunately we haven't been outside much due to being under the weather and just business of the holidays. We did make it back out yesterday though and hopefully can start back into our routine.
I still don't have an exact plan for devotions and prayers but we have added more to our day. I have just been taking time that we usually pray and adding more to that. We recently added a decade of the rosary with nighttime prayers as well. That has been great as we have got to introduce all kinds of things; how we sometimes ask others to pray for us, those on earth and in heaven. We have also talked about the mysteries and meditating. We told the kids about how when we pray we were thinking about Jesus and how he rose from the dead. Luke very seriously said, "Yes, I am thinking about it right now." Then last night we talked about the ascension and he added, "Because you cannot kill God."
There has been a lot more thanksgiving in our day and more of a focus on relying on God. So while we haven't added a ton what we have added has been so valuable.
2)Personal Devotions- I did start a personal devotion of morning and evening prayers, along with doing our bible readings and prayers from daily Mass. I have also started a plan to read the Bible and Catechism this year. I really like how it frames my day. I have felt a lot of peace from God and a real desire to draw inward. It has all been a great blessing and a wonderful addition to family life for all of us.
3) Managing the house- I am keeping up with the Motivating Moms fairly well. However, I have also been very huge with decluttering and simplifying, always on the quest to reduce what I need to do and have to take care of around here. So, the house was a bit upside down for a few days because of that. Currently it is in good order but I have some more plans that might derail things for a bit, trying not to be overzealous though!

Menu Plan Monday
Aww, winter time, soup time, hot tea time. Life seems to be slowly settling back into normal after the craziness of the holidays. I am still in a tizzy about the house, de-cluttering and simplifying, but hopefully am winding down a bit. Although I was just thinking today about how I want to paint the living room, hopefully my dear husband doesn't catch wind!
Todays frig inventory:
bell pepper: 2 green
cabbage: 1/2 head
spinach - 5 oz or so
romaine-2 heads/hearts
1/2 bunch cilantro
carrots-2 lbs
delicata squash- 12 lbs
sweet potatoes
potatoes
onions: red and yellow
celery
cauliflower: 2 heads
asparagus: 1 bunch
I also have frozen and canned green beans, corn and peas. Lamb, beef and chicken in the freezer as well. Last night I made fried "rice" with grated cauliflower, grated cabbage, carrots, onions and chicken- using my coconut aminos and other seasonings. It was absolutely delicious! I made the rest of the chicken with a ginger/honey/sesame/coconut amino marinade and cooked it for another day.
Monday:
Shephard's/Cottage Pie topped with Mashed Potatoes- baked delicata squash, side salad
veggies: carrot, celery, onion, potato, delicata squash, spinach, romaine, carrot, bell pepper
Tuesday:
Moroccan Chicken Soup
veggies: tomatoes(canned) and fresh, cauliflower, artichokes, onions, leftover delicata
I already have my bone broth going as I threw in the back from my chicken last night into the crock pot.
Wednesday:
Southwest Chickpea and Chipolte Soup
veggies: chipolte peppers(from can/frozen- as I only use a few at a time), cilantro, sweet potatoes, peas, celery
Thursday:
Beef Pepper Steak, asparagus, crustless pumpkin pie and salad
veggies: bell peppers, celery, onions, canned tomatoes, asparagus, pumpkin, romaine/spinach, carrots, red onion
Friday:
Veggie Curry w/ Cauliflower Rice
veggies: cabbage, sweet potato, cauliflower, onions, peas
Snacks this week:
celery and p.b.
hummus(will be soaking extra chickpeas tuesday night)
nut crackers
Not sure what else so far I would love a copycat recipe of the sesame seed crepes from Trader Joes but cannot find anything like that so far.
This plan looks like it will take care of my soon to perish vegetables while using some of my storage items as well. Hopefully, I stay on top of things and accomplish that!

*Wednesday* Menu Plan
Ack, 2 days late! I was out of the house on Monday evening and then all day Tuesday. Monday night we grabbed some quick bites in town and yesterday night it was taco night. This week we will have refried beans on the list again as I forgot to set them to soak last week, therefore they were never cooked- and I am still craving them!
Monday- Dinner Out
Tuesday- Taco Salad
Wednesday- Peppered Beef with Mushrooms and Peppers served with homemade Alfredo and Marinara Sauce(with brown rice penne for Brian and the kids- extra veggies for me) Side Salad
Thursday- Refried Beans, Guacamole (Wholly Guacamole this week as it was on sale), Fresh tomatoes and chipolte salsa served over Cauliflower Fried Rice
